Bagels

I’ve been looking for some sort of whole grain flour based bagels for a long time and I couldn’t find it in any groceries shop. I find gluten-free bagels everywhere, but what’s the point on buying a product made out of even more refined flours than regular bread flour? Of course it is important to have these alternatives avaiable. I’m sure people who suffer from celiac disease or gluten intolerance are very thankful for that, but the truth is that, normally, the final product is still quite unhealthy. Very rarely you’ll find a gluten-free product that is not made out if highly processed flours.
Well, here, at the house, we have no gluten issues and so, gluten-free bagels will have to wait. Specially because I don’t have much experience with gluten-free breads and whole wheat recipes are already complicated enough.

Carrot Muffin with Orange Frosting

In Portugal we have a lot of words. We have way to many words. We have a thousand words for the same thing and a thousand meanings for the same word. We don’t need more words. We’re fine. We got it covered.
So do you know what madeleines are? If you were born after the 90’s, you probably don’t. But muffins are just the new madeleines. When I was a kid there was no muffins in Portugal. We had madalenas (which is the portuguesation of the french name) and queques (which is the portuguesation of the english word cake), but they were just the same cake. Some people will say this isn’t true. But they’re stupid. It’s the same fuckin cake. Trust me.

“Queques? But who the hell still have queques? Such a jurassic thing! Nowadays people want muffins and cupcakes!”

First time I baked muffins was in chef school. It was a nice recipe indeed, with shit loads of fat and oily as fuck, just as a good traditional muffins recipe should be. The kind that people see as healthy because muffins are just sponge cakes.
After baked, the cakes were removed from the silicone forms. And my bakery chef says “And here you have your muffins.” And I say “That look exactly like queques.”. And he says “Exactly like queques? These are muffins! Totally different!”. And I was just thinking to myself “If you weren’t my teacher, I would punch you a fuckin queque down your throat.”.

Apple Brownie

Dude, call whatever the heck you want to your food, clothes, music, who cares? I’ll call this cake an apple brownie, just because the texture reminds me of a brownie. This is my blog, I call it whatever the fuck I want. There is nothing wrong with it.

And don’t get me wrong with the text above, there is nothing less honorable on selling food or something else on a trail or RV. But don’t try to sell people the ultimate organic chickpea vegan burger with homemade sourdough bread, freshly squeezed OJ and sweet potato fries for 10€ when it doesn’t worth 5€!!!

inhame caril

Taro Curry

In the island of São Jorge (St. George), particularly in the fajãs of Calheta, the inhame was, in times, so important for it’s people to thrive, that they were known as inhameiros (the inhame people).

The inhame was, by that time, considered the food of the poor and the slaves. Because of that, it was never submited to the dízimo (a religious christian tax). It was not a pleasent surprise when these guys found out that they would start paying it.

And worse than paying the dízimo, the farmers would even had to carry all the inhame to pay, from the fields to the collecting point. Stuff like wheat, corn or wine would always be taxed and paid in the fields, but the inhame, they would have to pay afterwards.

So, as you can imagine, carrying several kilos of inhame on your back, from the fajãs to the thorp, 500 or 600 meters all the way up, through goat tracks along the cliffs, was just an amazing experience. But giving it away to the crown at the end, was just the cherry on the top of the cake.

Thanks to this brilliant ideia, of course the farmers lost their shit and they went berserk. People died because of taro, just for you to understand how much they did enjoy that shit.

Açaí

It is said that one becomes a bit more brazilian by eating that tiny berry. Not that you should want to become brazilian, but they are the kings of Brazilian Jiu Jitsu after all. Anyways, no food has been as representative of Brazilian Jiu-jitsu as the well known açaí.
The açaí berry is a small, round and black-purple fruit, similiar but much smaller than a grape. It comes from a special type of palm tree that grows in very specific rigions in the globe such as the amazon rainforest and other parts of the northern south america. The berry is normally processed into a thick juice and sold frozen all around the globe. Though in Brazil it is used in juices, candy, ice cream, smoothies and compots. The seeds are even used in jewelry and the oil and pulp in many different hygiene products. Not that surprising for a country that produces pretty much 85% of all the açaí sold around the world.
The açaí berry is a very peculiar fruit with very peculiar macros. In every 100 gr. of pure açaí it contains 13 gr. of protein and 17 gr. of fat. Quite rich for a tiny fruit. Keep it mind that these values are for the pure berry itself, so the usual frozen açaí nutritional value is quite different and varies a lot. Several studies also show that açaí berries may be the most antioxidant rich fruit on the planet.

Thai Chickpea and Pumpkin Curry

Somewhere in a faraway summer, I worked with my friend João in a beach shack. Every sunday we used to have thai chicken curry with roasted peanuts. By that time, I was quite young, and I used to think that super hot food was for real machos.
The first time I made thai curry for my friends, me and Diogo end the up the dinner wearing nothing but boxers, the girls didn’t go further than the first bite and my friend Midário made me cook some chicken breasts for him.
The first time I made thai curry for my family, not even my father could eat. And he enjoys his piri piri sauce. The next day I took the rest of the food to my uncle’s coffee, in the Island where I’m from, and none of my father’s tough bearded friends could touch it.
Nowadays I like my food much less hot. Even Joana enjoys hotter food than me. In my opinion, when the food is too hot, you just miss all the other flavors. But I understand that in some cultures people are used to eat food so hot that they developed a higher endurance and addiction to it.
Today’s recipe is harmoniously balanced between fresh, hot and sweet. If you like spitting fire, you can always add more hot chilli peppers to it.
